The Cooperative is divided into two main areas.
The first – the larger of the two – is where production takes place. The other houses the administrative services.
In the olive oil-producing zone, the space is structured to ensure the entire process runs as smoothly as possible. Upon arrival in the reception area, the olives are taken quickly to be transformed using state-of-the-art machinery capable of processing 800 tonnes a day. Here we opted for PIERALASI – a brand that inspires confidence. The olive oil is then stored. Our 70 stainless steel storage tanks have a capacity of over 2,000,000 litres. The cooperative's laboratory takes between 5 and 6 thousand samples in each campaign, ensuring that the final product meets all the requirements.
Before it reaches the warehouse, the olive oil also passes through the automatic bottling line, where it is packed according to our customers' preferences.
The administrative support area is where we meet our members; there is a meeting room and a 350-seat auditorium. It is also where the public can try and buy the olive oil we produce.
